Porters Boutique Hotel

Southern Hospitality was approached via Project Design International to prepare working drawings for the high-profile development of Porters Boutique Hotel, a 42-room boutique hotel with a restaurant, function spaces and room service. It is part of the Village Exchange, a large new retail and office space in Havelock North.

Project Design International designed food service delivery around an a la carte kitchen and adjourning banqueting kitchen. The a la carte kitchen shares an open view into Malo, a restaurant emphasising locally-sourced, seasonal food.

Once the kitchen design was completed and agreed upon, Southern Hospitality worked with mechanical engineers from Panton Consulting to nominate and specify our Britannia extraction canopies.

We fitted the kitchen out with a wide range of equipment. For cooking we supplied Waldorf equipment and a Convotherm combi steamer, and offered Convotherm training to kitchen staff to prepare for the upcoming opening. Highly efficient Mercatus equipment was used for refrigeration, as well as a quality Scotsman ice machine.  We also supplied a range of stainless steel benches and Tonon shelving.

After the successful installation of kitchen equipment Porters asked that we review the design of the bar. After reviewing this we supplied Porters with a custom-made Delta bottle chiller and a Starline glasswasher.

All in all this was a very successful build, with great attention given to Project Design International’s plans. Everything came together very well aesthetically, and the Britannia Canopies over the kitchen fit very well within the suspended ceilings.

The Porters Boutique Hotel has 42 rooms plus meeting and conference rooms, as well as a restaurant and house bar. Porters opens next month, on the 1st of December.
