Nestled into the neighbourhood of Grey Lynn, Mother Bakery began with a simple idea: to create a space where artisan baking isn’t hidden behind the scenes but brought to life in front of customers.

From the start, the vision was ambitious. To create a space for a boutique bakery that also functions as a restaurant. A compact space capable of delivering high output. And, most importantly, a space where every loaf, pastry, and cake reflects craftsmanship at its best and where customers can see baking in action.

But turning that vision into reality required more than just good intentions.

The Challenge:

Mother Bakery faced many challenges, but the biggest was how to scale production without losing the soul of artisan baking.

They needed to keep up with high demand while maintaining the integrity of every product. The space had to remain spotless during active production, and the workflow needed to support both quiet preparation hours and high-energy service periods.

On top of that, they wanted customers to see the process.

The Turning Point:

The solution wasn’t just about equipment; it was about building a space that worked equally well for the team and the customer experience.

We carefully selected the equipment that brought consistency and control to the working space:

However, the real shift came with a simple yet powerful design decision: a viewing window into the bakery.

Suddenly, production became part of the experience. Customers could watch dough being shaped, pastries being layered, and loaves coming out of the oven. The bakery wasn’t just a place to buy; it became something to engage with.

A Better Way to Work:

Behind the scenes, the changes were just as impactful as those in the front of house.

With the retarder prover, production no longer needed to happen all at once. Dough could be prepared ahead of time, rested, and baked when needed, reducing pressure during peak hours.

The layout created a natural flow, allowing bakers to move efficiently between tasks while maintaining a clean, organised space.

It wasn’t just more efficient; it made the workday better for the team and more engaging for customers.

Today, Mother Bakery stands as more than a production space.
