1. White Chocolate Mousse
A creamy and indulgent dessert that's quick to prepare.

Ingredients:
- 100 ml milk
- 160 ml cream
- 140 g QimiQ Whip Vanilla
- 90 g white chocolate
- 20 ml white balsamic vinegar
Preparation:
- Heat the white chocolate with milk, cream, and balsamic vinegar until melted.
- Add QimiQ Whip Vanilla and blend until smooth.
- Strain through an iSi Funnel & Sieve into a 0.5 L iSi Whip.
- Charge with an iSi Professional Charger and shake vigorously 20 times.
- Refrigerate for 3 hours before serving.

2. Raspberry Espuma
A vibrant and fruity espuma that's perfect for desserts.

Ingredients:
- 180 g raspberries
- 20 g icing sugar
- 220 ml heavy cream (min. 32% fat)
- 100 ml milk
- 50 g mascarpone
Preparation:
- Blend all ingredients together.
- Strain through an iSi Funnel & Sieve into a 0.5 L iSi Whip.
- Charge with an iSi Professional Charger and shake vigorously 8–12 times.
- Refrigerate for 3 hours before serving.

3. Mozart Mousse
A rich chocolate and marzipan mousse with a hint of pistachio.

Ingredients:
- 125 ml cream
- 10 ml Monin pistachio syrup
- 80 ml milk
- 60 g marzipan
- 200 g QimiQ Whip Chocolate
- 60 g nougat
Preparation:
- Heat the milk, syrup, and QimiQ Whip Chocolate (do not boil).
- Dissolve the nougat and chopped marzipan in it using a hand blender.
- Stir in the cold cream.
- Strain through an iSi Funnel & Sieve into a 0.5 L iSi Whip.
- Refrigerate for at least 4 hours.
- Charge with an iSi Professional Charger and shake vigorously 20 times before serving.

4. Nitro Coffee Gin Tonic

Ingredients
- 500 ml water
- 80 ml tonic water
- 40 ml gin
- 100 ml Bitter Lemon
- 1 tbsp Pro Espuma
- 40 g ground coffee
Steps to Prepare
1. Cold Brew Coffee
Brew the ground coffee with water in the fridge for 24 hours. Strain through a coffee filter or kitchen paper. Combine the Cold Brew Coffee with gin in an iSi Nitro, attach 1 iSi Nitro Charger, and shake vigorously.
2. Bitter Lemon Espuma
Mix the Bitter Lemon with Pro Espuma and strain through an iSi Funnel & Sieve into a 0.5 L iSi Whip. Attach 1 iSi Cream Charger and shake well.
3. Nitro Coffee Gin & Tonic
Fill a tall glass with ice cubes and tonic water. Pour in the Nitro Coffee Gin and top with the Bitter Lemon Espuma. Serve immediately.
5. Warm Chocolate Mousse
A decadent warm mousse that's perfect for pairing with desserts.

Ingredients:
- 200 g dark couverture chocolate
- 10 ml white balsamic vinegar
- 60 ml milk
- 75 g butter
- 20 ml sugar syrup
- 3 eggs (150 g pasteurised)
Preparation:
- Melt the chocolate with butter, milk, and vinegar.
- Beat the eggs with sugar syrup and mix in the chocolate mixture.
- Pour into a 0.5 L iSi Gourmet Whip.
- Charge with an iSi Professional Charger and shake 12–14 times.
- Heat the iSi Gourmet Whip to 69°C in a sous vide basin or bain-marie.
- Serve over a scoop of vanilla ice cream and top with olive oil and almond brittle.
