With a prime location in downtown Mount Maunganui, the Solera Wine bar showcases small New Zealand wine producers while offering sharing plates of delicious food inspired by the world.

The Solera menu offers a mouth-watering range of grilled, smoked and cured dishes so the equipment provided by Southern Hospitality needed to cater for a variety of cooking methods. Working in conjunction with the client and their chef, a bespoke designed Hearth Style wood-burning oven was the perfect centrepiece of this stylish eatery. With an on-view kitchen and customer seating overlooking the food preparation area, eating a meal at Solera is more of an event. If you ask the Solera team what their goal is they will tell you it is “To constantly provide an incredible, complete dining experience for all our guests”.

To create a multipurpose cooking line suited to a menu designed for sharing, the Waldorf Target Top Oven (which is available as a standalone hob or with a choice of a specific base unit) and the high performance 10 tray Blue Seal Sapiens Combination Oven were chosen to make the best use of the kitchen space and galley style dining area. The custom Lo-Flo extraction canopy was designed in sections, allowing separate extraction on the cook line and over the solid fuel oven, meeting the required compliance but allowing for the versatile cookery processes and contemporary design.

Project Stainless Ltd, who form part of the Southern Hospitality project team, provided the customised stainless steel benching through the bar area- fabricated and designed specifically to the needs of the wine bar. The bar encompasses under bench refrigeration from Skope making best use of the space provided whilst displaying cold drinks in this open-plan environment.

Out of view of customers, the larger upright vertical Delta Refrigeration units were supplied for chilled and frozen storage in the back kitchen. And the cleanup area includes an M2 Starline Passthrough Dishwasher and Pre-Rinse Unit that will see many small plates, platters and crockery passing through.

To add a classy personal stamp to the Solera wine tasting journey, Southern Hospitality supplied Luigi Bormioli Italian Wine glasses printed with the Solera Brand, an extra touch to make the experience even more memorable.
