Imagine a design consultancy specialising in your business, the Hospitality Industry. With a technical resource of over 60 chefs and managers from wide ranging operational backgrounds, specific Product Managers in associated areas such as refrigeration, stainless steel fabrication and furniture, our industry knowledge is second to none. With a combined commercial design experience of over 65 years, dedicated project co–ordinators in 13 nation–wide locations, an accomplished design team of Architects, Interior Designers and Project Managers, this is Southern Hospitality Design + Build.
The internationally experienced Design Team is led by Design Manager Phil Llewellyn. Previously, Phil has worked both as a consultant and as in house designer to a major international hotel and hospitality group, involved with projects in Europe, North America & amp; Australasia. Complementing Phil’s experience and knowledge, the Design Team has vast design experience including interior and architectural detailing and the associated services including mechanical and electrical. The Design Team is also complimented with a number of in house Project Managers, capable of managing your project from initial concepts to full site supervision and construction to completion.
All this experience, knowledge and creativity enable the Design Team to function effectively and efficiently whether they are developing a new scheme, or modifying an existing site. Producing comprehensively detailed CAD plans, drawings and interior schemes for the customers and construction teams, which understand, interpret and communicate the ideas and requirements of a project. The Design Team works regularly with some of New Zealand’s most highly regarded Architects, Interior Designers and Construction Companies, on some of New Zealand’s most notable projects, to produce some of the most well considered hospitality solutions. We understand that each project has different requirements and as such we can vary our level of service to you accordingly, from wide ranging kitchen operations to full interior and brand / concept design. Our design documentation in both 2D and 3D CAD format allows a seamless coordination process with Architects, Interior Designers and other consultants. The level of documentation can be developed to include full interior detailing and specifications to allow competitive tendering for sub contractors, Building Consent applications and construction. The Design Team can produce presentations, ranging from 2D scaled layouts to a full 3D CAD visuals and ‘walk-through’ models with each component specified.
Our unique team of internationally experienced designers have offices in both the North and South Islands to offer a truly national service. This allows for flexibility on all sizes of projects undertaken, such as collaboration on larger, or time sensitive projects and continuity with the design documentation. All jobs are assigned an individual project co-ordinator who liaises between you, the client, and all other resources required to successfully complete your project. Additionally, we can manage the entire process for you and offer a full design, supply and installation package. From the initial brief to concept design, design development & full documentation package, fixed price quotation and implementation. We can also offer full training at handover and ongoing scheduled maintenance support. The earlier we can be involved in the project, the more value we can add in terms of design expertise, equipment specification & product compatibility.

The Britomart Country Club in downtown Auckland has its entire operation of kitchen, bars, storage & toilet facilities housed in shipping containers, which also act as the perimeter wall. With the entire area covered with lightweight steel structures & awnings, the outdoor feel combined with heating, lighting & music allows an all year round alfresco venue. Designed for the corporate lunch–in crowd mozaik is a contemporary café & restaurant with a flexible space to accommodate every occasion from a coffee break, to a meeting for two, to conferences, and is fully equipped for online application & visual presentations.
Students can not only benefit from their newly refurbished student hall at the University of Canterbury but they can enjoy being in it too. Taking the retro out of the hall was going to be difficult so working within the original design we drew from the past to create a modern & fun take on retro.
Designing restaurants for a franchise can be simple with a cookie cutter approach but with Nando’s Restaurants each has a distinctive design scheme & needs individual attention. Drawing on New Zealand culture while preserving Nando’s South African roots has proven successful in the design of many Nando’s restaurants throughout New Zealand.
Breathing new life into the dining areas, we have broken the formality of straight counter runs offering an informal arrangement of food court style service points. At three main bases across both North & South Islands the new style of food presentation is proving extremely popular allowing the high volume numbers to flow through for three meals a day seven days a week.
Replacing the main food and drink facilities at Wellington International Airport whilst still allowing the high numbers of daily passengers to be serviced, has been achieved by fast track programs in phase stages & off site pre–manufactured joinery. This has resulted in a modern world class facility in time for the 2011 Rugby World Cup.
Using environmentally friendly products and materials Auckland Zoo’s many food venues were transformed by a fast track program allowing the new facility to be up and running for the busy summer season. The design developed from a team approach incorporating the needs of high volume & wide ranging customers & events along with specific Zoo values.

With regards to efficient & cost effective Project Management services we can offer the following:
Hold a pre–contract meeting with all necessary parties & confirm general working practices, access, program & future meeting dates. Place & administer all orders. Administer statutory approvals. Ensure all final lease & franchise documentation details have been completed. Arrange pre site handover inspection & approve condition / lease details have been met. Obtain key from Landlord.
Project Manage the contract through to Practical Completion, hold regular site meetings to monitor progress, report any issues or problems & ensure workmanship & finish is acceptable. Arrange for council inspections, as required by the contractor, through to Completion Certification. Coordinate deliveries of FF&E & integration of sub–contractors. Arrange for commissioning & testing of all equipment & fittings. Arrange for any necessary equipment training & final sign off & handover. Prior to hand over review site document & rectify any snagging defects. Arrange operator access for training purposes. Arrange final inspection for Building Consent approval. Complete project file & hand over to Site Manager & copy to client where required. Administer all invoices & progress payments checking against approved budget.
Finalise all remaining invoices, opening defects, & general issues that may arise. Carry out period of defects inspection, oversee any remedial works & approve final payments. Review project generally including all suppliers, equipment, services & procedures. Consider operational feedback and agree any amendments to the project package / brief. Sign off project.

is the development of your interior concept where we will produce graphic communication and construction documents including: specification of finishes, furniture, fixtures, décor elements and assembly of Sample Boards culminating in a presentation of the concept for your approval. We will develop an interior design package customised to your staff and patrons’ specific needs from both a functional and aesthetic approach.
